Boom! Here we are at the week before Thanksgiving and that means hosting or attending holiday gatherings with family and friends. I don’t know why I feel like it always creeps up on me because it’s the same time every year, but here we are, right? And the month of December is usually full of all kinds of activities too so finding balance with healthy but tasty meals can be a bit more challenging this time of year. Last year, I shared with you their Cranberry Apple Crisp that was SO yummy so this year I’ve decided to share with you their Simple Slowcooker Mashed Potatoes. Who doesn’t love a dish that can be made in the slowcooker? It not only saves you time but also frees up your oven to use for other tasty dishes—one thing I know many of you all struggle with when trying to get a holiday meal to the table at the same time.

Simple Slowcooker Mashed Potatoes
Now on to the recipe. This recipe couldn’t be easier…just throw a few ingredients in the slowcooker and set on high for about 4 hours. Then mash and stir in the Greek yogurt and you’re good to go. I also love that they have cauliflower in here. My family was wise to the addition and said they tasted “different” (I told them what was in there) but still enjoyed them–yay for extra vitamins! These are a great addition to any holiday—or year round—table.
Simple Slowcooker Mashed Potatoes
Ingredients
- 1½ cups cauliflower florets
- 1½ lbs. red potatoes quartered
- ½ sweet onion chopped
- 1 cup water
- 1 garlic clove finely chopped
- 1 tsp. salt
- ½ tsp. pepper
- 1 cup Greek yogurt
- 1 tsp. parsley chopped
Instructions
- Blend cauliflower in food processor until fine.
- Add cauliflower, potatoes, onion, 1 cup water, garlic, salt and pepper to slow cooker. Cook on high 4 hours.
- Mix in yogurt with hand mixer until well incorporated. Top with parsley.
