Is it safe to assume that my meal planning wisdom has inspired you all to get a little more creative in your cooking? And surely that must mean you’re whipping up some wonderful breakfasts each day for you and your family, right? Just kidding! Even I get into a rut sometimes of cereal and toast each week and need a little kick-start for my creativity. What helps me is my Weekly Breakfast Plan. As you can see I love catchy little phrases and it just helps everyone remember what’s on the menu each morning when time’s usually pretty short (in our house, we need mornings to be as seamless as possible to get out the door on time–it’s always a challenge!)
Make your muffins on the Saturday or Sunday before when you have more time, pop them in the freezer. Then pull them out Monday morning and heat up in the microwave (I do about 30 seconds on 80% for one standard size muffin). A few of our favorites are Pear Walnut Muffins, Apple Carrot Muffins or Banana muffins. This day also means quick breads to me–banana bread, pumpkin bread, etc. What I love about this day is that we get an easy, extra serving of fruits and/or veggies too!
Toasty Tuesday: This can mean plain toast with jelly, peanut butter or sometimes cheese toast (slice of cheese melted during toasting). But we also include things like English muffins or bagels. For us it’s always the whole-grain variety which adds extra fiber!
Waffle Wednesday: Besides waffles, we may also include pancakes. Like Muffin Monday, I try to make up the waffles or pancakes on the weekend and freeze the leftovers so that I can heat up as many as I want when I want them. I’ve been experimenting with different whole wheat recipes too (for the fiber!) Lately I’ve been making a simple fruit sauce and top with whipped cream (not whipped topping like Cool Whip–too much sugar a.k.a. HFCS!). Think whipped cream is too indulgent for the mornings? Check out the nutrition label of your favorite pancake syrup and you may decide differently (and no, we haven’t cut syrup out entirely, we just use a lot less!) The easiest sauce for me to make is to take frozen fruit (blueberries, strawberries, peaches), dice it if needed and throw into the saucepan. I sprinkle a bit of sugar on top (say about ½ teaspoon per ½ cup of fruit), a dash of water and heat to boiling. Quick, easy and a yummy way to get more fruit–again!
Go With The Grain Thursday: On this day we usually have cereal or oatmeal. This is my easy day!
Eggs-ceptional Friday: Sometimes this means scrambled eggs, an open face egg sandwich, a poached egg or whatever we’re in the mood for! I recently came across a recipe for make-ahead omelets so I’m hoping to try that out soon–yum!
Saturday and Sunday: Anything goes! Depends on what we’re in the mood for on those days and what we’ve got going on.
Each morning I also try to include some sort of protein (yogurt, bacon, etc.) and fresh fruit. I hope you are inspired to get a little more creative in the kitchen–even on a busy morning!
