The last couple of weeks have been extra busy for me with two (different) school fundraisers to help with, a birthday party to plan and just regular life! One of the school fundraisers included a cake walk and being that I love to bake and decorate cakes of course I had to sign up. My son’s birthday party was scheduled for the next day so with three dozen cupcakes and a cake to bake I needed to have a plan. I had taken a cake decorating class many years ago and one of the tips the instructor gave us was to freeze the cake. Not only does this help with pre-prep but frosting a frozen cake is MUCH easier than a fresh one to avoid all those crumbs from mixing into the frosting–ugh! So I was baking my cupcakes and decorating them weeks before I actually had to serve them–creating less stress for me (well, relatively speaking of course!) So that’s my first little tip for you on what you can freeze.
But SO MANY other foods freeze well that it makes meal time a cinch when all you need to do is pull something out of the freezer, thaw (and sometimes you don’t even need to do that!), heat and serve.
When I’ve done my meal planning workshops, participants are always surprised to learn what I freeze. My favorites are chopped onions, berries, bananas (yes, good for smoothies or banana bread!), steamed vegetables and so much more. Another favorite thing I like to do is to buy a block of cheese, shred it, put it in a zip-top bag and freeze. Then I can pull out what I need for the recipe I’m preparing–easy and cheaper. Of course, freezing meats (either cooked or uncooked) is another obvious item to freeze.
