This delicious, fresh Mediterranean Dip is filled with cucumbers, tomatoes, olives,feta cheese and more. It comes together in minutes and is also make ahead! Serve it with pita chips or as a side to grilled chicken or seafood.
2cupscucumberpeeled and chopped into small pieces (about 2 medium)
2cupstomatoesseeded and chopped into small pieces
1cuppurple onionfinely chopped
4ouncessliced black olivesfrom a can and drained
2clovesgarlicminced
1cupFeta cheesecrumbled
2tablespoonsolive oil
2teaspoons Greek herb blendfind this in the spice aisle of the grocery store
Instructions
In a large bowl, combine all ingredients and stir to combine.
Cover and chill at least one hour so flavors can blend. Chill up to 8 hours before serving.
Serve with pita chips or toasted pita bread.
