15 ouncesrefried beansI prefer vegetarian refried beans, either pinto or black bean style
2tablespoonstaco seasoning mix
1cupsalsaoptional
1cupguacamole
8flour tortillas
Instructions
Preheat oven to 350° F
Spray a 9-inch x 13-inch baking pan with non-stick spray and set aside.
To Make The Filling
In large mixing bowl, combine drained can of tomatoes with green chilies, cooked brown rice, chopped green bell peppers, sliced green onions, shredded cheddar cheese, and taco seasoning mix.
To Assemble Burrito Bites
Lay one tortilla on a cutting board or plate.
Spread about two tablespoons refried beans on tortilla, spreading to the edges.
Add about ⅓ cup burrito mixture and spread to edges of tortilla. Roll up and place in prepared baking pan.
Repeat with remaining tortillas, refried beans and filling mixture until done.
Cover baking dish with foil and bake in preheated oven for 25 minutes.
Cut each rolled up tortilla into 4 pieces and repeat for remaining tortillas and serve.

MAKE AHEAD TIP:The burrito filling mixture can be made up to a day in advance and stored in an airtight container in the refrigerator until ready to assemble.Alternatively, each burrito roll up can be frozen in a labeled airtight container up to three months. To serve, remove one roll up and warm in the microwave, about 1 minute on high. MONEY SAVING TIP:I buy the store brand can of diced tomatoes and green chilies, cheese and refried beans to save money!
