Enjoy the flavors of the season with this Mandarin Tossed Salad. You'll be amazed at how quickly you can throw together a delicious salad and try something new--even on a weeknight!
8cupsromaine leaf lettuceor green leaf, spring mix, etc. --your favorite green leafy lettuce
1cupcelerysliced
6green onionschopped
3mandarin orangespeeled and sectioned (brand names are Cuties, Halos, etc.)
½cupalmondssliced and toasted
Dressing
½cupolive oil
¼cuptarragon wine vinegar
¼cupsugar
½teaspoonsalt
¼teaspoonpepper
½teaspoonhot saucesuch as Tabasco or Cholula sauce
Instructions
In a large bowl, combine lettuce through oranges and toss to combine. Portion out to each serving.
Top with toasted almonds on each plate/serving.
Drizzle dressing over each plate. You may also drizzle all the dressing on the lettuce mixture but I like for each person to be able to serve their own dressing as some like it more than others.
Serve immediately.
Notes
NOTE: You can find tarragon wine vinegar in the grocery store with the other vinegars. If you do not have tarragon wine vinegar, you may substitute cider vinegar but the flavor will be a little stronger.MAKE AHEAD TIP:Tear and wash salad greens and thoroughly dry lettuce and store in produce keeper container or in a zip top bag with a dry paper towel. The paper towel will absorb extra moisture. You may do this up to two days before serving.Another tip, combine dressing ingredients and store in an airtight container in the refrigerator up to 24 hours before serving. Oil may solidify so allow dressing to come to room temperature prior to serving (about an hour before).
