Bacon, lettuce (yes!) and tomato come together in this BLT Soup for a unique twist on this classic flavor combination in this super simple soup recipe! It's ready in under 30 minutes
In a 2-quart saucepan, stir together tomatoes, broth, beans and seasoning. Bring to a simmer; stir in vinegar.
In small bowl, toss together lettuce and basil. Ladle soup into large soup plates or bowls; garnish each serving with crumbled bacon, lettuce and basil.
Notes
To make a vegetarian version of this soup, leave out the bacon and substitute vegetable broth for the chicken broth.MAKE AHEAD TIP:Make the soup ahead of time and store in refrigerator for up to one day. Cooked bacon can be stored in the freezer for up to three months. When ready to serve, warm soup in medium sauce pan for 5-10 minutes or until heated through. Top with cooked bacon and shredded lettuce before serving. MONEY SAVING TIP:I like to use store brand canned beans to save money.
