This delicious Apple Carrot Salad with Raisins anda light citrus dressing takes only 10 minutes to prepare. It’s perfect as aside dish or light lunch salad on it's own!
1cupcarrotsfinely chopped or shredded; about 2 medium carrots
1cupGranny Smith applepeeled and finely chopped or shredded; about medium apple
1tablespoonslemon juice
2tablespoonsorange juice
2tablespoonssugar
½cupraisins
Instructions
Finely chop carrots and apples and place in a medium sized bowl.
Add lemon juice, orange juice, sugar and raisins.
Stir to combine.
Cover and chill at least 20 minutes. May be prepared up to 24 hours in advance.

I like to use a handheld, easy pull food chopper (affiliate link) to chop the carrots and apples. It’s non-electric and tiny enough to easily store in a cabinet, unlike a larger food processor which can take up more space.Of course you can also use a large chef’s knife to chop the apples and carrots, it’s really still very quick!I’d recommend chopping the apples and toss with the lemon and orange juice to help prevent additional browning.Make Ahead Tip: This salad recipe is naturally make ahead as it needs to chill for about 20 minutes but can also be made up to a day in advance.
