Inspired by a local grocery store's version, these jalapeno salmon patties are quick and easy and bursting with flavor and just the right amount of kick for a healthy dinner option.
1poundfresh salmon filetskinned removed, wild-caught will have a more intense flavor
2mediumjalapenosdiced
1cuptomatodiced
1cuponionfinely diced
1cupshredded cheddar cheese
½cuppanko breadcrumbs
1teaspoonall-purpose season salt blend
Instructions
Remove skin from salmon and finely chop. Set aside.
Dice tomatoes and drain off liquid.
In a large bowl, combine salmon, jalapenos, tomato, onion, cheese, breadcrumbs and season-salt.
Form mixture into four patties.
In non-stick skillet, cook patties one or two at a time over medium high heat approximately 5-6 minutes on each side until cooked through and outside is crispy.
Serve warm on bun or just the salmon burger with a side salad, if preferred.
Notes
You can prepare the patties up to one day in advance. Cook as instructed when ready to enjoy.
