This past weekend we had a big party at our house and served fajitas with all the fixings! It was a fun time and thankfully the weather held out for us that day. We still had some leftovers (a few people that were maybes weren’t able to make it and I over bought a tad) so I’m turning those leftovers into meals the rest of this week. That’s what’s on our menu this week so check out our dinner plan here:
Monday: Fish tacos with Cucumber Avocado Salsa
Tuesday: Special activity-no cooking for me!
Wednesday: Chicken Rice and Black Bean Tortilla Soup plus garden salad. I know it’s getting warm outside so not so much soup weather but this is one of our favorites and I have nearly all the ingredients leftover from our party to use up in this soup!
Thursday: Taco salad (all the taco toppings we love on top of a salad!)
Saturday: Special activity–no cooking for me! But I may bring these Marshmallow Cream Cheese Topped Brownies because I have all the ingredients on hand.
Sunday: Mexican Meatballs from Dream Dinners and homemade Mexican rice
This will be my last weekly menu plan for awhile. Summer break officially starts this week for my kids and between traveling and our more laid back schedule, I’m not sure how regular our menu planning will be. I’ll still be doing it but am not sure I’ll be organized enough to blog about it! This summer, I’m planning to post a few more new recipes and bring back some that are years old that I have tweaked over the years and want to reshare with you all (and for some of my newer followers, they’ll be all new to you!)
