This week is shaping up to be another busy one for us with lots of meetings, appointments and activities. So I’m trying to keep our Weekly Menu Plan simple and easy! Thank goodness for freezer cooking! I had a relatively clear schedule this weekend so I did make up some freezer meals. Some are new to me and others are old favorites like Bourbon Flank Steak, Homemade Chicken Pot Pie and Homemade Slowcooker Spaghetti Sauce. Many of the newer recipes I tried were from one of my favorite freezer cooking books, the 30 Day Gourmet’s Big Book of Freezer Cooking. Nearly everything we’ve ever tried from that book, my family has loved! And the bonus is, the book includes lots of worksheets to help you plan your freezer cooking session.
I accidentally bought too many tomatoes for some recipes that I made up over the weekend, so you’ll see those incorporated into the taco meals I’ve got planned this week. So here’s what’s on our menu plan this week:
Monday: Fajita chicken wraps with cilantro lime rice, tomatoes, black beans (I made a big batch in the slowcooker!), corn and other toppings!
Tuesday: Greek Tacos with tomatoes, rice, falafel (I use a mix), cucumbers, red pepper and feta cheese.
Wednesday: Venetto Chicken and Mushroom Tortellini (from Dream Dinners) with garden salad.
Thursday: Spaghetti Pie from freezer session (recipe is in 30 Day Gourmet’s book mentioned above) and garden salad
Saturday: Out to Eat/YoYo (You’re On Your Own) Leftovers
Sunday: Tilapia with rice pilaf and roasted broccoli
