This week is my kids’ first week back at school after summer vacation and it’s been a whirlwind! They are both in high school now and life seems to have gotten even busier. It seems as though we got into a bit of a rut over the summer with lunches so the start of a new school year is a great time for some new lunchbox inspiration. That’s why I’m excited to be partnering again with Produce For Kids this fall for their Power Your Lunchbox Promise® campaign and sharing this Buffalo Chicken Pinwheel recipe.
With each new campaign roll out, they add more and more recipes to their website that not only include lunchbox ideas but also after school snack and easy weeknight dinner ideas too for all those busy school days. My kids both have extracurricular activities after school so having filling, nutritious meals is key for us!
When you make the Power Your Lunchbox Promise® by September 23, 2018, you’ll receive 70+ healthy lunchbox ideas, money-saving couplns and a chance to win a prize pack from Ninja Kitchen. But even better, for every online pledge taken from now through September 23, 2018, lunchbox-friendly companies supporting Power Your Lunchbox Promise® will donate $1 to Feeding America® programs that support families and children which helps provide 11 meals through local member food banks.
The Power Your Lunchbox Promise campaign gives families the resources to fuel their kids throughout the day with nutritious, produce-inspired lunches while giving back to families in need. During the 2017-2018 school year, they were able to donate nearly 450,000 meals* to families in need through Feeding America® thanks to people like you.

RECIPE FEATURE: Buffalo Chicken Pinwheels
My family LOVES anything with buffalo chicken. They have a favorite chicken and pasta dish that we’ve tried at a local restaurant that I hope to recreate some day. Because of their love for all things Buffalo chicken, I was so glad to see this recipe for Buffalo Chicken Pinwheels on the Power Your Lunchbox website. With only five ingredients they are SUPER simple to make and so easy to add to a lunch box or even have as an after school snack (remember, I have busy, hungry teenagers!) Buffalo Chicken Pinwheels are bite-sized and easy to pack for lunch. Best of all, with only a handful of ingredients, the filling can be made in advance and the pinwheels assembled the night before or in the morning.
I’m sharing the recipe for Buffalo Chicken Pinwheels here just to give you a glimpse of all the delicious recipe ideas you’ll find on the Power Your Lunchbox website.
