A Classic Sandwich Combination: BLT Chicken Salad Sandwich
Several years ago when Starbucks expanded their menu to include breakfast and lunch options I was all over it. Truth be told, I don’t really go to Starbucks all that often but when I do, I like to try their new savory menu items. They all look so good (and many have tasted as good as they looked).
So those several years ago, one menu item that caught my eye was the BLT Chicken Salad Sandwich. If you’ve followed me for awhile you may have noticed I love this classic combo. I’ve shared other recipes like BLT Soup and One Pot BLT Pasta and BLT Egg Salad Sandwich.
Bacon, lettuce and tomato has long been one of my favorite sandwiches and mixing it with a chicken salad? Now that’s genius! When I originally posted this recipe in 2013, I searched online for a similar recipe but when I couldn’t find one, I decided to create my own.
It was really quite simple to prepare and it was a HUGE hit with my family. My son especially like the classic BLT combo. This BLT Chicken Salad recipe is definitely a keeper! I love that it also has a variety of healthy ingredients like tomatoes and lettuce. I like to use a lean bacon too. You can use a whole wheat bread but if you want to splurge a little bit go for a thick slice of crusty French bread.
Since originally posting this recipe, I’ve discovered a delicious BLT at of all places a Texas based chain convenience store called Buc-ees. (If you’re a Texan, you no doubt may already know about them—some of the cleanest bathrooms in the country!) They use Texas toast, thick cut pepper bacon, lettuce, tomato and a creamy mayonnaise.
I think the next time I make this BLT Chicken Salad Sandwich I may mix things up and add some pepper bacon and Texas toast to kick up the flavor! No matter how you make it, I hope you’ll love this sandwich as much as we do!
BLT Chicken Salad Sandwich
Ingredients
- 2 cups cooked chicken shredded or cubed, I used leftover rotisserie chicken
- 8 pieces bacon cooked and diced
- 1 cup tomato diced
- ½ cup mayonnaise
- ¼ teaspoon salt or more to taste
- ¼ teaspoon ground black pepper or more to taste
- 8 pieces Romaine lettuce
- 8 slices whole wheat sandwich bread
Instructions
- Combine chicken, bacon, tomato, mayonnaise, salt and pepper. Mix well and chill in refrigerator for about 30 minutes or longer to let flavors blend.
- Toast bread if desired.
- For each sandwich, layer lettuce and about ½ cup of chicken salad mixture. Top with another lettuce leaf and slice of bread.
- Enjoy!
