Did you miss my weekly menu plan last week? I had hoped to get one done for you all but we were out of town and I just didn’t get it together enough to write it up before we left for vacation. We had a great time enjoying the snow in Colorado. I know many of you are sick of the snow by now, but here in our part of Texas, it’s pretty rare to see much snow at all so the kids had a great time playing in the snow and we all had a great time skiing and tubing!
I’m not sure about you but after the lull of the holidays in January and February, March makes up for that and doesn’t seem to stop until school’s out for the kids in terms of keeping us busy! So I’m going to try to keep dinner’s simple and hopefully utilize my slow cooker a bit more. I’m headed to Dream Dinners for another session later this week to restock my freezer with easy dinners for busy week nights.
Here’s what’s our weekly menu plan looks like for this week:
Monday: Chicken & Cilantro Potstickers (from Costco), steamed rice and edamame
Tuesday: Slowcooker Loaded Baked Potato, Chicken Ranch-Style Soup (trying a mashup of a couple of recipes to hopefully create a new one to share with you all); garden salad
Wednesday: Herb Crusted Flank Steak (from Dream Dinners), roasted broccoli and wild rice pilaf
Saturday: Out to eat/leftovers–this is a crazy busy day with multiple things going on for all of us, so we’re going to wing-it on meals
Sunday: Tamales (from freezer) & Freezer Hodge Podge (this means I pull out whatever single servings there are in the freezer and we just heat and eat from our own freezer buffet!)
