This week I’m stil cooking from my freezer…not sure how it seems to be staying so full! I guess I’ve been cooking fresh here and there more than I realized. But I’m glad to have my freezer stocked for busy weeks. Here’s what’s on the menu for us this week:
Monday: Honey Ginger Pork Tenderloin, roasted broccoli & cauliflower and wild rice pilaf (this was a repeat from last week as I never actually made it. Last week the meals I did make yielded more leftovers than I had planned for so we ate from those instead to use them up!)
Tuesday: Homemade meatballs & spaghetti sauce (both from the freezer) over whole wheat pasta and a garden salad
Wednesday: Crunchy beef tacos with all the fixings
Thursday: Homemade Wedding Soup (from the freezer)
Saturday: out to eat
Sunday: Pizza roll & garden salad. I use this homemade whole wheat pizza dough recipe though.

Last week I was lucky enough to take a behind-the-scenes tour of the new Whole Foods Market that is opening in Katy, Texas! It’s official Grand Opening is THIS Wednesday, January 30th. What struck me was how different it was from the store nearer me in terms of the layout and design features. The employee who was our guide told me that they try to make each store unique to the area they are nearest. And I knew that they offer organic and natural foods but she also told me that they try to locally source as many products as they can and like to work with local producers and farmers. Neat! This store has a really neat bulk food section and even has a bar! They will also have a huge selection of meals-to-go where you can customize your salad (with 37 organic items!), choose from a hot food bar or grab-n-go meals prepared in their kitchen.
So if you’re in the Katy area, be sure to stop by on their grand opening week at Whole Foods. Each day, for that first week, a percentage of their sales will benefit local Katy-area charities.
