Since I sat down last week and planned my meals for the rest of the month, I’m excited that I can get this out to you all early for some inspiration but also that I’ve got my plan ready to go and all I need to do is shop for any extra ingredients. Have you tried meal planning for the month yet? By knowing what we’re having I can prep ahead if I need to to fit around the kids’ activities after school too!
Here’s what’s on our menu this week:
Monday: Taco Salad (no special recipe–just everything that would go into a taco but mixed up in a salad instead!)
Tuesday: Lasagna Soup , garlic bread and garden salad
Wednesday: Chicken Patties with Veggie Spears
Thursday: Carnitas and fixin’s (pepers, onions, guacamole, sour cream, cheese, etc.)
Saturday: special activity–not sure what’s happening for dinner yet!
Sunday: Chipotle steak (marinated in a chipotle pepper sauce that I purchased–got sucked in by an in-store demo!), baked potato or sweet potato. veggie of some kind
