Berry Green Smoothie {Crazy Cooking Challenge}


It’s time for another Crazy Cooking Challenge hosted by Tina at Mom’s Crazy Cooking. This month’s theme us smoothies! Smoothies are our go-to beverage for breakfast and snacks. I love that you can throw in all sorts of fruits (and even vegetables!). We like to customize ours depending on our mood with other ingredients like juice, milk, yogurt, honey or peanut butter.

It seems as though there are TONS of smoothie recipes out there. But I loved this one because it is simple and SO delicious. And with berry season in full production right now, it’s a great time to take advantage of all the berries out there. My kids and I all gave it a double thumbs up. I found it on the Six Sisters Stuff blog. What I love about it is the “secret” ingredient of spinach. I started added spinach to our smoothies summer before last when we were visiting my sister-in-law and her family. She served us a green smoothie and I’m telling you, you really cannot taste the spinach! But it adds some great nutrients to the smoothie—double bonus!

Berry Green Smoothie {Crazy Cooking Challenge}

Serving Size: (This makes 1 serving—I doubled it for myself and

Ingredients

  • 1/2 c. apple or orange juice (we ended up using lemonade because that’s what I had on hand)
  • 1 c. of spinach
  • 1 banana
  • 1 c. frozen mixed berries (strawberries, blueberries and blackberries)

Instructions

  1. Add juice and spinach to then blender and blend well. Add banana and frozen fruit and blend together.
  2. *You can add water to reach your desired consistency.

Just a few simple ingredients is all it takes for a delicious smoothie. We used lemonade instead of the called for apple or orange juice. Created a nice "tang".

Delcious strawberries! I used the kind that are sliced and found in the frozen section of my wholesale club.

Good-for-you spinach! You can't even really taste it in the smoothie!

We always have plenty of bananas on hand. Sometimes I will slice overripe bananas and freeze them for adding to all sorts of smoothies.

Frozen blueberries work great! We go blueberry picking every year so have them in the freezer year-round or you can buy them in bulk at your local wholesale club (or stock up when they go on sale at the grocery store).

Whole Wheat Buttermilk Freezer Biscuits

I think it was probably a summer or two ago when we found the blue bag of buttermilk biscuits in the freezer section of our local wholesale club. I bought them thinking, they must be better than the biscuits from a can. And flavor-wise, I’d say they were. But then I realized they were kind of expensive and probably not all that great for us. But we do love a good buttermilk biscuit. And you know I do love having my freezer filled with quick and easy breakfasts for busy mornings.

So when I saw these Freezer Biscuits pinned on Pinterest, I knew I must try them right away! Our first batch disappeared in a flash it seems. But I wanted to make them healthier so I substituted half the flour with whole wheat flour. Success! While they do have a slight whole wheat flavor, my family has gobbled them up. I think I’ve made two more batches in just the last few weeks. I know these call for shortening or butter and I’ve been using shortening. My experience with baking biscuits is that shortening helps with the fluffy layers. But I do plan to experiment with the butter sometime soon. I’ll keep ou posted on the results. These are just so yummy AND easy, I couldn’t wait to share. Oh! And I did the math on all the ingredients and making them from scratch is exactly HALF of what the pre-made version costs. I hope you enjoy them too!

WHOLE WHEAT FREEZR BISCUITS
Recipe adapted from Frugal Antics of A Harried Homemaker blog
2 1/2 cups whole wheat flour
2 1/2 cups all-purpose flour
1/4 cup sugar
1 tsp baking soda
2 tsp salt
3 tsp baking powder
1 cup shortening or butter or combination of both
1 envelope yeast
2 Tbsp warm water
2 cups buttermilk

In a large bowl, combine the first five ingredients. Cut the shortening into the flour with a pastry blender or fork until mixture resembles coarse sand. Dissolve the yeast in the warm water. Add both the yeast water and the buttermilk to the flour. Knead the dough until it is no longer sticky and feels elastic. Roll out to about 1/2-inch thickness. Using a bisuit or cookie cutter, cut into circles and place on a baking sheet. I like to line mine with wax paper or a silicone sheet to help make them easier to remove.

Freeze until hard and then place into a freezer container. Don’t forget to label and date your container! I like to put the baking instructions on the label too so anyone can make them. We use our toaster oven to bake up a few. To make, bake at 425 degrees until tops are light brown. The original recipe says about 15 minutes but I have found it’s about 20-22 minutes for the whole wheat. You can bake these either frozen or unfrozen. If you let them thaw, they will rise a bit because of the yeast.

Gather all the ingredients before your start. As you can see, I buy a lot of things in bulk for an organized pantry.

I cut the shrotening into chunks before cutting it in with my pastry cutter. Much easier to blend!

See how the mixture looks kind of “crumby”. Also, I mix the yeast in water with a fork. Doesn’t stick as badly as with a spoon.

The first time, we rolled them too thin and they were not as flaky. This time we used a ruler so we knew just how high a half-inch was in dough height.

Once the dough is rolled out it’s quick and easy work. I put biscuits on silicone mat on a baking sheet before going in to the freezer. Easier to remove to storage container later.

Once the biscuits are frozen, you can stack them in a freezer storage container or bag.

I use reusable freezer labels to write the contents, date and baking instructions on my container which equals easy prep time!

5 Quick and Healthy Breakfast Ideas
It’s the most important meal of the day, and if you’re in the habit of skipping breakfast, you’re definitely going to pay a heavy price in terms of good health and looking and feeling good. When you start the day with a power breakfast that’s loaded with healthy ingredients, you feel more energized, you give your metabolism a much needed boost, and you tend to eat much less as the day goes by. The most common excuse for skipping breakfast is that you have “absolutely no time”. However, waking up a half hour earlier to eat a healthy breakfast is worth the effort and the sacrifice. So before you head out the door every morning, ensure you try out these quick and healthy breakfast ideas that are proven to improve your day and your overall health.

Carry on with Cereal: If you love cereals, your best breakfast is a bowl of cooked oats mixed with some skim milk and topped with nuts (almonds or any other unsalted and unprocessed nut) and fruits (blueberries, bananas and strawberries make delicious additions to oatmeal). You could add some cinnamon and honey to augment the taste. Other wholegrain cereals are also fine as long as they’re not coated in sugar or chocolate. Remember, keep the sugar and cream out and stick to wholegrain options and low-fat dairy.

Energize with Eggs: Eggs are probably a popular breakfast food the world over; however, they’re most healthy when they’re boiled, scrambled or made into an omelet. For a breakfast that’s healthy and tasty and which will definitely hold your hunger till lunch time, slice a boiled egg, add salt and pepper and little low-fat spread, place it between two slices of wholegrain bread, and you have a protein and fiber-rich sandwich. If you prefer, you could make scrambled eggs or an omelet with onions and tomatoes (spray oil on the pan to grease it instead of using spoonfuls) to replace the hard boiled ones, and if you’re a real health nut, you could use just the egg whites for your sandwich. Avoid fried eggs and other forms of cooking them that use too much oil or butter.

Support with Smoothies: If you’re not much of a morning person, this is the breakfast for you. A smoothie packs a punch in terms of nutrients and also satisfies your sweet tooth. Mix your favorite fruit with some skim milk or vanilla-flavored yoghurt (chose the low fat kind), add some chopped nuts or pieces of fruit, and you have the perfect breakfast on the go.

Fortify with Fruits: Another great breakfast idea when you’re running late or when you’ve had a late night and are still groggy, or if you’re hung over and cannot bear the sight of food – chop a few of your favorite fruits into a bowl, add some honey and nuts, and spoon them in as you go about your morning chores. Or if you’re too lazy, just bite into an apple and a few bananas and finish with some orange juice (no sugar).

Check out with Cheese: Low fat cottage cheese is not really a breakfast on its own, but when combined with fruit and bread, it forms great additions to your breakfast tray. You could enjoy a cheese and fruit platter or make yourself a grilled cheese sandwich with some tomatoes (yes, they can be eaten for breakfast too).

Your breakfast is healthy as long as it doesn’t involve too much sugar, cream, fat, oil, and cooked meat like bacon, rashers and the like.

Breakfast Burritos (Menu Inspiration Ideas)

This is the latest installment in my Breakfast Challenge to discover and try new ideas to increase our collections of breakfast ideas beyond the same old things.

A couple of weeks ago I got a crazy good deal on eggs so bought a couple of cartons and made up a bunch of Breakfast Burritos to put in the freezer (did you know you could do that?) I also got some bacon as part of a “meal deal” special at the grocery store. We don’t normally have a whole lot of bacon but I baked it in a big batch (lets the grease drip away), then chopped it and added a sprinkling into the burritos.


I added some sauteed onions, wrapped them up in a flour tortilla and we were good to go!

Then I flash froze them on a cookie sheet then transferred them to a baggie. I can now pull out a burrito at a time, heat in the microwave for about a minute and a half and have a protein filled breakfast to help us get a good start to our mornings. My daughter especially loves these breakfast burritos. She likes to add a little salsa to hers to spice things up. I’ll usually add some fruit on the side or make a smoothie to go along with them–yummy!

Breakfast Challenge! {Menu Inspiration Idea}

I’ve got a quick update on our breakfast challenge for this week. A couple of weeks ago, while shopping at my local grocery store, I came upon a Produce For Kids display near the produce section with a bunch of little recipe cards. I picked up a few and before I knew it I had chosen nearly all of them!

As the title suggests, the meals feature lots of produce that have great kid appeal. This week we tried out the Breakfast Pizza. I substituted flour tortillas and pears since I didn’t have the pita bread or apples on hand. The kids LOVED them and gobbled them up (I loved them too!) They were SO easy to prepare and I’m counting this as a success! Count one more recipe to expand our breakfast options.

Breakfast Challenge-Third Time’s A Charm! {Menu Inspiration Idea}

Now that summer’s here I feel like I can really get into the Breakfast Challenge! I know I’ve tried a couple of times before, but my hope is that I’ll have a little more time now to try more recipes so that once the busy school year returns, we’ll have an all new arsenal of options to help make breakfast time a little more interesting and delicious!

Last month I was contacted by Coach’s Oats to try their steel cut oats. I had read about steel cut oats and the nutritional benefits they had as part of a healthy diet. But I had also read that they take a super long time to cook so had never really tried them. Enter Coach’s Oats. They are steel cut oats but are prepared in a way that allows them to cook much more quickly–in less than five minutes instead of 45!

I received my samples and was anxious to try them. I popped them in the microwave with the suggested amount of water and in about five minutes I had a full serving of oats! I shared some with my son and we added a little brown sugar and some raisins and a dash of milk. The taste test was a success! These oats were a little chewier than rolled oats (that’s the main difference between the two–their nutritional content is about the same) and had a great flavor. My son even went back for seconds and finished two bowls–yep, I had to make more! The second time I prepared them I added a dash of honey and some fresh blueberries on top–yummy!

Help Make Breakfast In Bed a Reality

Ahh….doesn’t this picture look like the ideal way to spend a weekend morning? Your kiddos got up and made a wonderful breakfast all by themselves and woke you up to enjoy it (and bonus…they cleaned up the kitchen too!) Wait a second, I must still be dreaming…that’s not how it is at my house! Frankly, I can’t remember the last time I was served breakfast in bed. But with Mother’s Day coming up and the kids being a little bit older, it may just happen this year (or so it’s been hinted)!

My husband is not exactly a big chef but he’s not too bad either. But, we’re both a lot happier if he has a little direction to get him started. When I started gathering ideas for the Breakfast Challenge, I came across this fantastic website that has a billion recipes to choose from (ok, not really, but there are a TON). At MrBreakfast.com , you’ll not only find thousands of recipes to choose from, but there is also a search option to find a breakfast restuarant near you if whipping up a breakfast in the kitchen is not happening. With an article database, forum, shopping for all things breakfast related and even comprehensive listing of over 1,200 different cereals (called The Cereal Project), the site is sure to inspire just about anyone to get their day started with the “most important meal of the day” (as many experts say!)

The Breakfast Challenge is on a little hiatus right now but I’ve still be testing recipes in the morning and am planning on lots more. Sometime I’ll get around to blogging about it too.

Breakfast Challenge-Revisited!


So, March is nearly over and I kind of dropped the ball on the Breakfast Challenge. I had great intentions and lots of ideas but didn’t implement (or blog!) about many of them at all!

But since I’m a big believer in starting our day with a healthy breakfast, I’m determined to make it work so I am extending the challenge indefinitely. I’m planning for my next freezer cooking session and will include some breakfast items as well as some dishes made in the slow-cooker. Yep, how great will that be to wake up to a hot breakfast that cooked while I was sleeping? I can’t wait to get started!

I think it would be great if we had LOTS of participants and I promise to try and be more regular about posting our own progress (successes and failures!) I know many of you are interested because you’ve emailed or told me directly, so lets share our ideas by joining in together here!

A Breakfast Bacon Burrito Panini? Of course!

Ok, so you know I’ve posted several times about Panini Happy–one of my favorite blogs that features delicious, original panini’s created by blog owner, Kathy.  So when I decided to start the Stop Boring Breakfasts Challenge, I asked Kathy if she’d be interested in creating one to help inspire MY readers to try something new and tasty too!  Enter the Bacon Egg Breakfast Burrito Panini.  Sounds good huh?  What wouldn’t be good about scrambled eggs, bacon, potatoes and melted cheese all squished together in a burrito?  I think that’s something my family can get excited about–I hope you do too!

Bacon Breakfast Burritos

The Smurfs, soccer games and “real breakfast” defined the Saturday mornings of my childhood. I looked forward to each of these events every weekend , but especially the food. I would wake up to the inviting aromas of pancakes, French toast or bacon and eggs wafting from the kitchen. It was usually one of those three dishes, but once in a while my mom would surprise my dad, sisters and me with muffins too. It was my favorite time of the week, when life slowed down and my family could ease into the day together. Until it was time to hit the fields for soccer.

These days I enjoy making “real breakfast” on Saturday mornings for my own family. On last weekend’s menu: breakfast burritos. There’s a taqueria near us that makes excellent ones, full of scrambled eggs, potatoes and smoky bacon. When I made my own version at home I decided to sneak some cheddar cheese inside as well and grill it on the panini press to get the outside nice and crisp. With a little chipotle salsa spooned onto each bite for a kick of heat, these breakfast burritos were a wonderfully satisfying way to start our weekend.

Bacon Breakfast Burritos
Serves 4

INGREDIENTS:

4 slices bacon
2 cups frozen diced potatoes with peppers and onions (sometimes labeled as “Potatoes O’Brien”)*
8 eggs
Salt and pepper
4 flour tortillas, 10-inch “burrito size”
4 ounces shredded sharp cheddar cheese
Salsa and sour cream for serving

DIRECTIONS:

Place bacon in a skillet and turn stove on to medium heat. Cook, turning often, until bacon is cooked through and crisp. Remove bacon to drain on a paper towel.

Pour off all but about 2 teaspoons of bacon drippings. Carefully add potato mixture to the skillet (especially if using frozen potatoes it may spatter). Cook about 7-8 minutes until vegetables are cooked through, stirring occasionally. Add eggs. Continue cooking and stirring until eggs are set. Season with salt and pepper to taste.

Preheat the panini grill to medium heat.**

For each burrito: Place a tortilla in the microwave on High for 10 seconds to make it fold easily. Place ¼ of the egg mixture in the center of the tortilla. Sprinkle cheese on top. Fold burrito by folding in the left and right sides and then rolling it up from the bottom.

Place the burrito onto the panini grill, seam side down. Grill for 2 to 3 minutes until tortilla is toasted and golden grill marks appear.

* Alternatively, you can dice your own red potatoes, red and green bell peppers and onions

** If you don’t have a panini grill, you can also bake the burritos in an oven or toaster oven at 350° until the tortillas are browned and toasted.
