Today my kids started Back To School and that means I’m going to have to start meal planning a big more regularly! This summer, with vacations and other activities, I winged it a little bit more with a weekly meal plan. Each year we have a traditional first day meal of tacos. This year it will be a Taco Salad because my daughter got braces and cannot eat the taco shells so easily anymore (so her salad will have them crumbled up into much smaller pieces). Does your family have any Back-To-School traditions? Our Taco Tradition started before my son started school so for the last year or two he has been asking for a favorite meal so I’ve decided to put that towards the end of our week to celebrate a good first week at school!

Here’s what’s on our menu for this week:
Monday: Taco Salad (we include lettuce, chopped tomatoes, black beans, taco seasoned ground beef, sour cream, salsa, avocado and shredded cheddar cheese)
Tuesday: Greek island shrimp with pasta (from Dream Dinners)
Wednesday: Slowcooker Chicken Fajitas (with a lot of the leftover fixings from the Taco Salad!)
Thursday: Pizza Roll Bread (similar to this one but I make the crust from scratch usually) & garden salad
Friday-Sunday: Labor Day holiday weekend–we’ve got plans over the weekend so I’m not sure what our meal plan will look like just yet!
Ready for a Meal Planning Challenge?
Next month I’ll be starting a Meal Planning Challenge. This time of year is kind of a “reset” time for those who have kids. A time to get organized and back to routine. But even if you don’t have children at home, many committees or other activities that have been on break for the summers start up so your routines may change too. I know a lot of you all have told me you wished you did meal planning more regularly. So for the month of September, we can support and encourage each other to get going–no matter where you are starting from! I hope you’ll participate–even if it’s only from afar.
