This week is going to be a semi-busy week in the evenings with some special activities going on. I need to try to keep things simple! So here’s what’s on the menu this week:
Monday: Chicken & Cabbage Potstickers (from freezer session), steamed rice, edamame (found in the freezer)
Tuesday: special outing–Banh Mi sandwiches from local restaurant (made fresh & delicious!)
Wednesday: Honey Glazed Pork Tenderloin, cauliflower gratin or roasted, garden salad
Thursday: Chicken, Rice & Black Bean Tortilla soup (to use up a rotisserie chicken I bought last week), garden salad
Sunday: special occasion–out to eat
And here’s a tip for you when you’re grocery shopping! My local Kroger store frequently offers Manager’s Specials on dairy, meat, bakery items and sometimes produce. Sometimes you can get a really good deal on foods that are about to expire but are still good. My kids like organic yogurt tubes like these pictures above and last week I found these more than 50% off! So what did I do? Since there were still a couple of days before the expiration date listed, they enjoyed a couple fresh and we put the rest in the freezer. They are great in lunches because they thaw before lunchtime but are still cold enough to enjoy. Score!
