I’m finally back in the swing of things when it comes to actually writing down a real meal plan. Over the summer, I kept it pretty flexible because our schedule seemed to change so much. But this week is going to be an extra busy one so I needed to figure out what we could have for dinner and make it all work. I’m relying on a couple of new-to-me slowcooker recipes that I pinned on Pinterest awhile ago and never tried because I have some very full days this week with lots of meetings. Here’s what’s on our plan for this week:
Monday: Open Faced Pizza Sloppy Joes (similar to this recipe–I need to type it up and publish MINE for you all!), carrot sticks on side
Tuesday: Crockpot Enchilada Soup w/ garden salad
Wednesday: Crockpot Parmesan Garlic Chicken with Orzo & steamed broccoli
Thursday: leftover
Friday: Special activity–no cooking for me
Saturday & Sunday: TBA–we’re going every which way this weekend so I need to give a little more thought to this–may just be paninis or something grilled that I’ve pulled from the freezer!

Open Faced Pizza Sloppy Joes sound so good! I’m doing a lot with squash and potatoes this week since they are in season. I love chicken stuff potatoes with salsa and greek yogurt.
