Well, I had really hoped to get back to blogging last week after my break but the stomach flu started in our household on Monday and didn’t end until Friday. So much for meal planning! The good news is that everyone is feeling MUCH better and it didn’t last long for each of us at least! Not the best way to start our first week of summer. We did recover in enough time to enjoy some berry picking this weekend. Thanks to the rains this spring, the blackberries and blueberries in our area are growing in abundance! We visited two local farms for our picking. What I love is that these berries are grown pesticide free and we’re also supporting local farmers. So today I’m posting our meal plan for the week. Now, know that my summer meal plans are somewhat fluid because if we get a last minute offer to do something fun, we’ll often take the “offerer” up on it and scrap our dinner plans for something simpler (like sandwiches)! But I like to have a loose plan in place just in case. So here goes:
Monday: Swim meet in the afternoon/evening means pack-your-own snack/dinner in our EasyLunchboxes container (we usually do a variety of fruits or veggies, lunchmeat roll-ups, whole-grain crackers, cheese sticks, etc.) and a treat from the concession stand (by packing our dinner, we don’t spend as much at the concession stand but still get a treat)
Tuesday: Grilled Bourbon Flank Steak (already in my freezer), sweet potato wedges and garden salad
Wednesday: Crawfish Etouffe (we have a crazy amount of crawfish leftover from a recent party so I’m experimenting with a new recipe this week), garden salad
Thursday: Slowcooker Rotisserie Chicken (I’ve got to make room in our freezer for all the berries we picked this weekend); served with garden salad or side of tomatoes & cucumbers with dressing and noodles
Friday: leftovers
Saturday/Sunday: Our plans are still up in the air for the weekend so I’m not sure yet what’s on the menu!
