This is the latest installment in my Breakfast Challenge to discover and try new ideas to increase our collections of breakfast ideas beyond the same old things.
A couple of weeks ago I got a crazy good deal on eggs so bought a couple of cartons and made up a bunch of Breakfast Burritos to put in the freezer (did you know you could do that?) I also got some bacon as part of a “meal deal” special at the grocery store. We don’t normally have a whole lot of bacon but I baked it in a big batch (lets the grease drip away), then chopped it and added a sprinkling into the burritos.
I added some sauteed onions, wrapped them up in a flour tortilla and we were good to go!
Then I flash froze them on a cookie sheet then transferred them to a baggie. I can now pull out a burrito at a time, heat in the microwave for about a minute and a half and have a protein filled breakfast to help us get a good start to our mornings. My daughter especially loves these breakfast burritos. She likes to add a little salsa to hers to spice things up. I’ll usually add some fruit on the side or make a smoothie to go along with them–yummy!
