
Summer time means crazy menu schedules for us! I’m not cooking much this week so here’s what’s on our menu:
Monday: swim meet–no cooking for me (we’ll eat from the concessions that night–including yummy Pei Wei lettuce wraps!)
Tuesday: Mexican Cheese Fondue–we’ll serve ours with cherry tomatoes, fresh green beans, cut up zucchini, cubed day-old Italian bread, and some leftover Italian meatballs I have in the freezer–yum!
Wednesday: meeting-out to eat
Thursday: Breakfast For Dinner–we’re having buttermilk pancakes and Scrambled Egg Nests; fresh fruit on the side
Friday: leftovers
Saturday: special activity–potluck means no cooking for me!
Sunday: TBA!
