Menu Plan Monday

I’m picking up produce from the local organic produce co-op this week so am going to try and tailor my meals to include a bit of those items…here goes:

Monday: Make-Your-Own Pizza and Barbecue Chicken Pizza, garden salad
Tuesday: Kid Friendly Burritos, carrot sticks & dill dip
Wednesday: Harvest Pork Loin (slowcooker meal from Super Suppers), potatoes, Beets in Orange Sauce
Thursday: Rustic Italian Totellini Soup, garden salad
Friday: leftovers
Saturday: out to eat
Sunday: leftovers

I’m also getting pears from the co-op and have some plain yogurt to use up so will probably make these Pear Walnut Muffins–my kids love ‘em!

One last tip…for the pizza, I use pre-made pizza crusts bought by the case at Sam’s Club (we don’t have a Costco near us). The 16″ crusts (extra large!) come a dozen to a case and average about $1.50 per crust. I go in together with a few friends and we split the case, cut up the crusts into quarters, pop into freezer bags and keep in the freezer until ready to bake. A super easy and inexpensive way to make “homemade” pizza at home–we can top each slice with whatever toppings we want and have our own individual pizzas at home…yum!
