Don’t let the size of this book intimidate you! At over 1,000 pages it is quite a book! But, if you’re looking for a way to learn more about the basics of cooking and baking, this book is a must have for any serious (or even semi-serious) cook. Not just a recipe book, what is especially valuable is the editors’ detailed how-to’s on all sorts of techiniques. From how to devein shrimp to how to choose a ham to preparing brown rice, you’ll find it in this book. What I also like are the various equipment reviews (saucepans, knives, tools, etc.) and product reviews (what is the best canned tomato sauce or testing baking powder for freshness), this book seems to have thought of it all. It is a great way to get a crash-course on cooking without having to spend the time or extra money going to cooking school!
